If you know me, then you know how much I love to cook but I can’t bake to save my life! I swear, I wish I could do both but yeah it doesn’t happen in my kitchen.
Im going to start sharing more recipes on here and my take on Mediterranean cooking.
Let’s start with the salad, its one of my favorites & there are several ways you can make it. All depends on the flavor you’re wanting to achieve and of course what you’re pairing it with. I typically pair this salad with fish, fried or baked. My family loves it.
Oh & by the way, I don’t measure anything that I cook but I promise I will try to give you the closest measurement possible.
Diced tomatoes & onion, chop the parsley (I use about 10 tomatoes and 2 bunches of parsley) and one large onion. Chop, chop, chop. In a large bowl add two large tablespoons of garlic (I use the one in the jar already minced). Add all of the tomatoes, parsley & onion. Salt & Pepper to taste. Olive oil to mix & 3-4 freshly squeezed lemons. Mix it all together, taste it and make sure it doesn’t need more. Otherwise it’s good to go!
After you’ve made the salad, take some of it and use it as your stuffing for fresh fish! Be sure your fish is extra clean, especially the middle where you’ll put the stuffing. Add the stuffing inside & on-top of the fish. Salt, pepper & cumin. Olive oil & sliced lemon. Be sure your pan has aluminum foil on it, place the fish on top, add all of the ingredients and make it look extra pretty! Bake at 375 degrees for roughly 45 minutes. Best way to know the fish is done is by putting a fork in it and make sure that it falls apart and the meat is white. Once its fully cooked- broil it for 5-10 minutes to give it a nice golden color.
Take it out & enjoy!! Its truly heavenly & super easy to make!
